Great Gun Oysters

Paul McCormick grew up fishing, clamming, and crabbing on the south shore of Long Island. He received his undergraduate degree in Environmental Science from Cornell University and worked for a number of years as a full-time clammer on the Great South Bay. After a twenty year stint as an educational assessment writer, he returned to the water in 2013 and established the Great Gun Shellfish Farm in Moriches Bay.

Surface-grown in open waters, Great Gun oysters are shaped by constant wave action, promoting dense, savory meats. Each oyster is hand-tumbled to encourage strong shells and a clean, crisp finish. The farm’s location offers a distinctive merroir defined by marine plants, ocean inlets, underground freshwater springs, and surrounding salt marsh and forest. This complex environment produces oysters with a balanced profile, reflecting the richness of eastern Long Island’s coastal ecosystem.
