Connor Burke is the president and operator of Eastern Bays Company, based in the Peconic Bay. Connor is a graduate of SUNY Maritime College and loves combining his passion for aquaculture and growing a sustainable, delicious oyster. Connor and his family currently reside in Cutchogue, New York.

Eastern Bay Company is a small, family-run oyster operation that believes that pristine waters and extraordinary care will produce a superior oyster. We are proud to introduce our Great North Bay Oysters, responsibly harvested in the wild Great Peconic Bay at the intersection of brisk seawater and sparkling fresh waters.

Great North Bay Oysters are cultivated in cages, because we recognize that harvesting oysters from the wild generally requires dredging, which disrupts not only oysters, but every other organism living in the beds. By cultivating our oysters in cages placed in wild waters, we have a smaller environmental footprint by minimizing disruption to the sea floor, but also by contributing to the native population by seeding the natural beds; when our oysters reproduce, they each send millions of eggs into the sea, effectively ‘seeding’ the natural/native environment.
