Eel Town Oysters

We have been working on the water in the Peconic Bays for over 30 years.  Oystering is the natural outgrowth of this process.  Our oysters are grown in the pristine waters near Jessup Neck in Noyack Bay at the intersection of Shelter Island Sound.  The swift current brings the food our oyster’s feast on with a balanced salinity.  We chose the name Eel Town Oysters in honor of the sacred space on Shelter Island that is Eel Town.  Like John Tut’s Hill and the many vistas that make living on Shelter Island a unique pleasure, Eel Town has the remembrance of things past.
