Toasted Oysters
Our oysters are cultivated in mesh bags using a floating cage system. Floating pontoons are attached to the cages, keeping the oyster bags submerged just below the surface of the Great South Bay. As the currents flow in and out of the bay, the oysters move around inside the mesh bags and bump against one another, stimulating their growth. This process creates the distinctly deep cup associated with authentic Blue Point Oysters and provides them with a crisp, briny flavor.
